"L'ANC, crée en 1975, est ouverte à tous les Professionnels des Métiers de bouche : Cuisiniers, Pâtissiers, Charcutiers, Traiteurs, Chocolatiers, Confiseurs, Boulangers.
Ne rentre pas à l'Academie n'importe quel professionnel. Il faut avoir fait ses preuves et être parrainé par deux membres confirmés de l'A.N.C. qui se portent garants de l'Homme et de son professionnalisme.

Maître Rotisseur
The Chaîne des Rôtisseurs is a global gastronomy association dedicated to promoting good cheer and defending conviviality and dining pleasures in a spirit of cordial brotherhood and friendship. Its vocation - unique in its type - is to bring together professionals (chefs, restaurant and hotel owners and managers) and non-professionals from all over the world who share a common passion for good wine, great cooking and good cheer.
The brotherhood now has more than 26,000 members spread across over 80 countries.
The Chaîne des Rôtisseurs originated in 1248 in the traditions and practices of the old royal French corporation of the "Ayeurs" (which means goose roasters) as the goose was a highly prized meat in the Middle Ages. This corporation - that was founded under the impulsion of King Louis IX, later to become Saint-Louis - was progressively enlarged to include roasters of all fowl, meat and game.
,New laws were approved in 1509, during the reign of Louis XII that resulted in the Ayeurs corporation being renamed the "Rôtisseurs". Over more than four centuries, the Confrérie des Rôtisseurs cultivated and developed the culinary arts and very high professionalism and quality requirements until the corporations were dispersed during the French Revolution in 1793. The Rôtisseurs were virtually forgotten until 1950 when 5 gastronomists and chefs, including Valby and Curnonsky (elected "Prince des Gastronomes"), decided to revive the association and to found
"La Confrérie de la Chaîne des Rôtisseurs"
At a national level, being a member of the Chaîne provides members with the chance to meet other people who share the same enthusiasm for gastronomic values and conviviality. Meals are organised for the connoisseurs during the year in eating houses that are renowned for their competence, the warmth of their welcome, their artistic finesse and presentation of their food, the choice and quality of their cellars. Other gastronomic meetings are also organised during certain festivals such as at Saint Valentine, the summer solstice and Saint Nicholas in addition to regional gatherings.
In addition to the national events, there are also many international events: gala dinners, Grands Chapitres and Chapitres - lasting two, three or even four days - that offer gastronomic meals in the best local hotels and restaurants.
The ambience of great brotherhood, of genuine and warm welcome, of friendship that presides over the international events is really remarkable and you can find yourself on the other side of the world but... feel as if you were at home.

"Tables du Terroir"
There is a wind of change blowing through the ‘Office des Produits Wallons’ and as part of this, the 'Maisons de Terroir' network is changing its name to become 'Tables du Terroir'. At the same time, a stricter chart has been written with a view to offering and showing a maximum of products from our region.
Who can use it?
The 'Tables du Terroir' sign is awarded to restaurant owners who commit to offering and highlighting a menu and suggestions based on Walloon products. It is part of a promotional campaign for Walloon products in the HORECA region.
In order to check the product's true source, their origins must be mentioned in each dish's name. The source of the products will be checked regularly.
The «Tables du Terroir» menu must be renewed each season.
